Ingredients

Preparation

Preheat the oven to 425 degrees F.

Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture.

In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined.

Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges.

This was great. I have made shrimp scampi before hands down this was the best dish I have ever made. I did skip the rosemary... It was great and my family enjoyed it....

Nice flavor and easy to make but will reduce or omit Rosemary nextime. The egg yolk bound the Panko topping together, I prefer a looser, crisper topping and will omit the egg yolk next time. Also I will reduce the butter to 1 stick. This is actually Ina Garten's recipe, aka "The Barefoot Contessa". For those of you who need assistance, there is a video on the Food Network.

This Baked Shrimp Scampi is buttery, garlicky, lemony and overall incredibly delicious! The seasoned butter sauce of the finished dish is really something, Its garlicky, buttery goodness, perfect for sopping up with a crusty bread or perhaps some Cheddar Bay Biscuits. The recipe is easy and takes very little time to prepare. We've made it several times now and each time we're amazed at what a fantastic meal it is for so little effort. The optional broiling step really helps both the appearance of the dish and texture of the topping; I would advise against skipping this step. We served this over rice along with a simple salad and some crusty bread. It would also be great tossed with some linguini and Parmigiano-Reggiano or Anthotyros cheese.
