Excellent, refreshing dip for the summer.
1. Put oil in large nonstick skillet over high heat. Add the corn kernels, salt, and pepper. Cook until the cord is slightly charred, 5 - 10 minutes. Add the garlic and cook for one more minute.
2. Mix the corn and remaining ingredients in a large bowl.
3. Serve with tortilla chips.
