Pickled Beets for Diabetics

Ingredients

  • 1 can of Sliced Beets(Drained Liq. reserved)
  • 1 small Onion very thinly sliced
  • 2 Tbs. Artificial Sweetener
  • 0.25 cup Cider Vinegar
  • 0.5 teaspoon cloves

Preparation

Layer beets and onions in a heat proof bowl. In a small sauce pan bring the reserved beet liquid, vinegar, sweetener and cloves to a boil, reduce heat and simmer for 1 minute. Pour hot liquid over beets and onions, cover and let flavors develop for an hour. Serve

For health reasons I use low sodium beets and do not add salt but certainly if you can use it the recipe would only benefit from a healthy pinch. [I posted this recipe.]
