Ingredients
- 1 pound chicken boneless, skinless, cubed
- 1 large chunks (bite size)
- 1/2 large chunks (bite size)
- 1 teaspoon garlic minced (like comes in a jar)
- 1 can use a large can of stewed tomatoes instead
- 3/4 cup orange juice
- 1 cup sour orange instead of orange and lime)
- 1 teaspoon cumin
- 1/2 teaspoon chili powder low salt
- 1/2 can French cut green beans no salt added
- 1/2 can carrots no salt added
- 2 bag brown rice
- 1/2 can sweet peas no salt added
- 1/2 can corn no salt added
- 1/2 teaspoon ginger
Preparation
I like to saute the peppers, onions and garlic and brown the chicken a bit first. But you don't need to. Put all ingredients except last 4 in a large pan. Cover and bring to a boil. Boil for 10-15 minutes. Then put on low and simmer for at least a couple hours. Can be served now or for better flavor, cool then refrigerate and re-heat later. Before serving, prepare rice per box instructions. Add corn, peas and ginger. Serve chicken mixture over rice mix.
