Carrot chutney has carrot has the main ingredient but what enhances it's taste is the coriander.
1. Heat oil in a wide pan. Add dals, red chillies and jeera. Once dals turn golden brown, add carrot.
2. Fry the contents for 3-4 minutes. Add tamarind to this and fry for few seconds.
3. After the above mixture cools, blend/grind them along with salt and chopped coriander.
4. Add seasoning if desired. We had it without seasoning, it still tasted good.
