Cook two cups of saffron rice (or yellow rice - I like the kind that comes with seasoning added already).
Grill 2 chicken breasts.
Dice tomato & onion
Chop parsley until it is medium fine.
I like to layer it as follows: rice, chicken, veggies, with feta on top!
