Chop your hard boiled eggs and place them in your mini food processor or magic bullet blender, add the Mayo, Mustard,blend until creamy, add salt and pepper to taste. Heat up your griddler or skillet with a little oil or butter, slice baked potatoes into half inch slices, cook on griddle or skillet until browned and crisp on each side, when done,place them on a nice serving platter and spoon on some egg cream, and add your favorite garnishes,capers, paprika and bacon bits.
