Coconut Shrimp

A tasty coconut shrimp recipe

Ingredients


Preparation

Pat the shrimp dry, In small bowl, combine cornstarch, salt , pepper and cayenne. In a 2nd bowl, whisk egg whites until foamy, In another bowl place the coconut and bread crumbs together (tip)you may run the coconut and bread crumbs through the magic bullet or blender to make them finer), Coat shrimp with cornstarch and shake off excess. Dip into egg white and then press into coconut to get full coverage.

Heat peanut oil or what ever kind that you have, to 350, gently submerge shrimp 6 at a time, fry until golden on each side, Remove to paper towels to drain,

For the sauce: Mix marmalade, mustard, horseradish, and salt

Dip shrimp and enjoy

These were awesome!! I used 2 kg of GIANT prawns and we ate them till we were sick!! Excellent!! I used fresh coconut and toasted it in a dry pan for 3 minutes before blending it with the bread crumbs. I also let them set up in the fridge for 30 minutes. Other than that, I followed the recipe exactly!! Medal worthy for sure.

The shrimp looks amazing! I want to try this recipe soon, but I have 1 question:

Did you use fresh or packaged coconut? I absolutely hate packaged, so I will use fresh regardless, but I'm just wondering.

Absolutely the best coconut shrimp ever! Everyone I've made this for is amazed at how good it is. I didn't use the orange dipping sauce - went for an apricot chili sauce instead.

I use paper bowls to put the ingredients in, then just throw them out, less mess, the time is a rough estimate. This recipe tastes like outback shrimp. [I posted this recipe.]
