Grease a pie plate generously
Layer one tortilla, little sauce, couple tablespoons of meat, olives, little cheese. Repeat layers.
Finish with a tortilla, little sauce, cheese, olives and place the tomatoes'' and jalapeno slices evenly all around. Bake 350 for 35 minutes.
Slice like a pie, it comes out clean, top with any additional toppings.
NOTE: if using canned enchilada sauce, you may need to thicken it with a little flour and water, other wise the pie might be runny. You want your sauce the consistency of a thickened tomato sauce. I also mince my meat in the magic bullet or food processor to make it fine.
