Spinach and Red Pepper Pasta

This dish is light and can be served cold or warm. Add some chicken or shrimp and its complete!

Ingredients


Preparation

Heat EVOO on Med/High Heat and cook Onion, Garlic, Basil, Salt , Pepper, and Herbs De provance until onions are translucent (Careful not to burn the garlic).

Add Red Pepper and cook for 3 minutes then add spinach salt and pepper to taste.

This would be the time to add in shrimp if you like.

Cook Pasta as directed. Drain but save some of the pasta water to add to the spinach and red peppers. Combine drained pasta, pasta water, and spinach-red pepper mixture (toss well). Add some Parmesan Cheese on top if you like.

This recipe was delicious. It was pretty easy to make. As far as price, I would definitely make it in the summer when peppers, basil and spinach are on sale. Yummy! Also, sauted some zucchini in with the veggie mix to add more veggies. I also served tomatoes and feta along side it.
