If you have a food processor, chop the dates lightly with 1/2 cup of the sugar. If not, chop them by hand, and add the sugar all at one time.
Add the butter to the water (boiling hot), and soften the chopped dates in the hot water for 10 minutes or so.
Preheat oven to 350 degrees.
While the dates are softening, cream the sugar and eggs. Blend in the dates and cooled water. Slowly stir in sifted flour (keeping out 2 T), baking soda, and salt. Mix in vanilla.
Stir the remaining 2 T flour into the chopped nuts, and fold into batter. Pour batter into well greased tin cans or pans (I grease with Baker''s Joy or Pam). Tins should be 1/2 full. Bake until top springs back when touched lightly.
