Preheat oven to 400 degrees. Grease muffin pans well, or line with paper liners.
Combine buttermilk and granola in a large bowl; set aside.
Sift together dry ingredients, and stir in ginger pieces; make a well in the center; set aside.
Combine beaten egg, brown sugar and oil; beat together. Combine egg mixture with granola and buttermilk mixture. Pour egg/granola mixture into the well in the dry ingredients; blend quickly with as few strokes as possible.
Fill muffin pans 3/4 full, and bake approximately 25 minutes until skewer inserted in the center of the muffin comes out clean.
