Cream butter and sugar until fluffy. Add eggs, and beat until smooth. Add soda, which has been dissolved in the sour cream. Beat well and add mashed bananas, then flour (into which nuts have been tossed), salt, and vanilla. Mix well, and pour into well greased loaf pans.
Bake at 325 (up to 350 degrees at high altitude) degrees F for one hour, or until tester inserted comes out clean. Cool on a rack, and serve with butter or sweetened, whipped cream, hot or cold.
Adjustments for altitude: Reduce sugar by 3-4 tablespoons, reduce baking soda by 1/4 teaspoon, increase flour by 2 tablespoons, increase sour cream by 1 tablespoons, and bananas by 2 tablespoons (this is increasing the liquid)
