Makeover Fruit Pizza

This fruit pizza is much healthier, and has nearly half the calories, fat and cholesterol of your favorite bakery variety.

Ingredients

PREP TIME: 30 min TOTAL TIME: 30 min

Preheat oven to 350 degrees F.

In a large bowl, combine the powdered sugar and flour. Cut in the cold butter until crumbly. Press onto an ungreased 12-inch pizza pan. Bake for 10-12 minutes or until very lightly browned. Cool on a wire rack.

In a small bowl, beat the sugar, vanilla and cream cheese until smooth. Spread over the crust. Arrange strawberries, oranges and blueberries on top.

FOR GLAZE:

In a small saucepan, combine the pineapple juice and lemon juice with the cornstarch until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Drizzle over the fruit and refrigerate until chilled, approximately 30 minutes to 1 hour.

DOUGH ALTERNATIVE: I use refrigerated sugar cookie dough in place of the flour, powdered sugar and cold butter since I really haven't acquired the 'cutting in butter' technique very well.
