Chilled Grilled Summer Squash with Balsamic Dressing

I had these at a catered baby shower, and then tried to duplicate it. These are great on a hot day, I make mine in the morning (it was 114 today in the desert) then they are ready as a great side dish. They go with any kind of meat or seafood. You will love the grilled flavor mixed with a hint of sweetness.

Ingredients


Preparation

Cut squash on the diagonal, cut them thick, if they are too thin, they won't turn out right. maybe half inch.

Heat up grill pan until extremely hot, sprinkle a little bit of olive oil right before squash goes in. Salt and pepper your squash and lay them on the hot grill on the diagonal.

Let them get extrememly grilled with out burning, turn over once they are grilled on one side, add a little oil if pan gets too dry. Lay them on a plate when finished and let them get room temp. then chill for a few hours

Right before serving, mix your balsamic vinegar, olive oil, garlic and sugar, (no recipe, just make it like you would a dressing for drizzling. just drizzle it on.
