Wash, Peel and Largely Chip the sweet potato and maris piper potatoes.
Heat olive oil in 2 oven flat oven dishes, seasoning with salt and pepper.
When oil is hot (230c) place potatoes in 2 seperate dishes and put the maris pipers in first for 10 mins then add the sweet potatoes to the oven for a further 10 mins or until golden brown.
Finely chop the onion, pepper and pear and cook in a little oil for 2-3 mins on a high heat. Add jam and water and season and boil for 4 mins. Whizz up to thicken and add a splash of double cream.
Heat grill, oil steaks lightly and cook steak for 4 mins each side or less depending on size and thickness.
Plate the steak and potatoes. Drizzle sauce to one side and garnish with thin sticks of pepper and tomato.
