Garbage Spaghetti Sauce - Idiotproof

This is the easiest and tastiest spaghetti sauce around - all the extras in your fridge you don't know what to do with, throw it in the pot for a delicious sauce.

Your going to start off by heating up your pot - when it's nice and hot, add your olive oil and italian sausage. While the sausage is cooking, cut up your red onion, throw it in with the sausage and cook until pork is no longer pink. You will then add your sliced/minced garlic and all of your spices - the oregano, basil, salt & pepper. Cook for several more minutes until very fragrant, then add in your favorite red wine. You'll want to cook this for a few minutes, to infuse the flavor of the wine in with your pork and spices.

After that, you are just going to dump in all of your tomatoes and the tomato soup & tomato sauce. Also put in all your veg, the mushrooms & sundried tomatoes - minus the spinach, you don't want that to get soggy and gross during the long slow cooking process. But you can also use other vegetables than what I listed; this is why I called it garbage sauce, kinda like the pizza, use whatever you want. Zucchini, olives, artichokes, those are also good candidates for the sauce.

Mix all your ingredients well, set your burner to low and walk away. You'll want to come back every 30 minutes or so to stir and make sure there is no stickage at the bottom of your pot. But if you have it set low enough, that shouldn't be a problem. A maximum of 5 hours is probably the most you'll want to cook this, so start it mid-afternoon.

When dinner-time is approaching, you'll want to cook your pasta. When your past is almost al-dente, add in your freshly cleaned spinach to the pot and stir until it has wilted completely with your sauce. Lastly, add your 1 cup of 1/2 & 1/2 & only 1/2 a cup of your favorite cheese. I used fresh Romano this time and it was yummy. Mix the 1/2 & 1/2 w/the cheese real well, until cheese is melted and your sauce is a medium/dark orange in color.

Drain your pasta, seperate it in bowls for the family and drown your past with this yummy super delicous sauce all over the top, as much as you want b/c you have a ton of it! Then, finish it up by adding a nice fat pinch of the leftover grated cheese and you are all set!
