Toasted bread, scraped with fresh garlic and topped with tomato.

Ingredients


Preparation

Slice the loaf of bread into desired thickness. Grill, toast or broil the slices on both sides and rub lightly with the garlic cloves. The toasted bread acts as a grater for the garlic. Drizzle olive oil over the bread slices. Meanwhile chop the tomatoes and season with salt, pepper and remaining olive oil.

To serve, spoon the tomato over the bread slice and enjoy the taste of Summer!

To avoid the bread becoming soggy, spoon the tomato topping on the bread when ready to serve. [I posted this recipe.]
