Preparation
Salad:
- Peel cucumbers and chop width wise into small circles
- Take the cucumer circles and chop vertically, making small cucumber sticks
Salad Dressing:
In a bowl combine a 1/4 cup of white vinegar
3 tablespoons of sugar
1/3 cup of water
Add cucumber strips to vinegar dressing and refrigerate for 3 hours.
Shrimp:
Add olive oil, soy sauce, garlic, scallions, crushed red pepper flakes, salt, pepper, shrimp and ginger.
Note: Grate the ginger into the pan so the ginger juice gets mixed into the sauce too.
Sautee until shrimp are done (3-5 minutes)
Remove shrimp and drizzle lemon juice on them
Lightly brush the shrimp with a Thai Sweet Chili dipping sauce
Serve the shrimp over the cucumber salad
