Ingredients


Preparation

Place chopped Chocolate and Butter in a bowl large enough to hold both plut eh heavy cream.

Bring the heavy cream just to a boil, then pour over the chocolate and butter, stir gently to incorporate until the chocolate is completely melted and smooth.

Combine in a sauce pan with the milk and heat over medium heat stirring until completely combined. Remove from heat.

Whisk the eggs, egg yolks and brown sugar in a stalinless steal bowl until combined. Carefully pour the warm chocolate mixture into the egg mixture, tempering it slightly as you begin, and combine thoroughly, but don't froth!. Pass through a fine sieve.
