Ingredients
- 1 tomato (diced)
- 1 onion (finely chopped)
- 1 chilli (dried or fresh)
- 1 sweet potato (diced)
- 1 can of lentils (or 1/4 cup of dried lentils)
- 1/4 teaspoon of dried turmeric
- 1 salt and pepper to taste
- 1 crushed cumin to taste (but a generous amount rec
- 1 coriander to garnish (coarsely chopped)
- 500 mL of fresh stock (vegetable beef or chicken is fine)
Preparation
In a saucepan cook the onion until it's soft, add in the tomato and chilli, cook it a bit longer, then add everything else (starting with the stock) except the coriander. Bring to the boil and then turn down to simmer. Simmer until sweet potato and lentils are soft. Season with cumin, salt and pepper to taste. Garnish with coriander
