This recipe takes hamburger helper and turns it into something really tasty! The hamburger helper can be prepared the day before and refrigerated.

Ingredients

  • 1 box cheesy enchilada hamburger helper (prepared as dir
  • 5 large poblano peppers
  • 4 oz shredded cheddar or jack cheese
  • 1 medium onion chopped
  • 4 ounces sour cream

Preparation

Preheat oven to 350 degrees.

Roast, peel, and cut a slot in the poblanos and remove seeds.

Place the peppers into a 10 inch casserole dish.

Mix most of the shredded cheese and chopped onion into the cooked hamburger helper.

Stuff the peppers with the mixture and top with a little more shredded cheese and chopped onion.

Bake at 350 for 30 minutes.

Top with sour cream and serve.

This is equally good with the cheesy chicken enchilada product. If I am in a hurry, I don''t bother roasting and peeling the poblanos and my family likes the dish just as much.

For a gourmet touch, sprinkle chopped pecans on top of the sour cream. [I posted this recipe.]
