Walnut Rum Meringues Ingredients

1 Egg white CHOCOLATE CREAM
1 ts Cornflour (cornstarch) 125 g Butter
1/2 c Castor (granulated) sugar 1/2 ts Rum
60 g Walnuts 1 c Icing (powdered) sugar
2 ts Rum 60 g Dark chocolate

Instructions for Walnut Rum Meringues

From: ynnuf@yetti.amigans.gen.nz (Doreen Randal) Date: Mon, 29 Nov 93 21:09:38 PST Beat egg-white until soft peaks form, gradually add sugar, beat until dissolved. Fold in finely chopped walnuts, sifted cornflour and rum. Drop half-teaspoonfuls of mixture on to well greased lightly-floured oven trays. Allow room for spreading. Bake in slow oven 30 mins. When cold, sandwich together with chocolate cream. CHOCOLATE CREAM: Melt thoroughly chopped chocolate in basin over hot water. Cool a little. Cream butter and sugar until light and fluffy.
