1. Season pork on all sides with the salt, pepper, and cumin. Place pork in crock pot. Spoon the jam over the pork, turning to coat. Scatter the jalape?os and onion around the pork. Cook on low until fork-tender, about 6 hours.
2. Use a fork to shred the pork. Transfer to a bowl. Pour the cooking juices, onion, and jalape?os over the pork and toss.
3. Serve with the tortillas, cilantro, and lime wedges.
Tip
When the pork is done, turn off the heat, wrap the tortillas in foil and warm them for 10 to 20 minutes.
