Preheat the oven to 450 degrees
In a large pot boil the noodles
While the noodles are boiling, in a large skillet, saute the chopped onions, mushrooms and bell peppers in olive oil or butter and sprinkle with garlic saly and pepper.
Pick apart the chicken into small to medium sized pieces. Set aside.
Drain the noodles and put back into the pot. set aside
Pour the cream of mushroom soup and the cream of chicken soup, stewed tomatoes (slightly drained), and rotel into the pan with the sauteed vegetables and mix well.
Pour the soup mix into the pot with the drained noodles and add the chicken. Mix well.
Pour all mixed ingredients into the casserole dish and spread evenly. Scatter cheese to cover the entire top.
Place foil on top and bake for 15-20 minutes or until cheese is melted.
