SWEET AND SOUR SAUCE: Stir together 4 t. cornstarch, 1/4 c. each sugar, wine vinegar, chicken broth, 2T minced fresh cilantro, or 1 1/2 t. dried cilantro.
1. Add 1 T oil to hot wok. Add garlic and chicken and stir fry until cooked. (~3 Min.). Remove from wok and set aside. Pour remining oil in wok. When oil is hot and onion, stir fry until crisp.
2. Return chicken to wok. Stir sweet and sour sauce, pour into wok along with pineapple. Stir until sauce boils and thickens.
3. Spoon equal portions of chicken over rice.
