In a small skillet, heat olive oil over low heat and sauté onion, 20-30 minutes, stirring frequently, until beginning to brown. Add nutmeg, salt and pepper. Set aside to cool. Combine goat cheese, egg yolk and yogurt in a small bowl. Spoon mixture into Athens Mini Fillo Shells. Bake in a pre-heated 350°F oven until set, about 15 minutes. Top with onions and serve.
