Prociutto wrapped Figs with Goat Cheese

This is like heaven in your mouth. A great appetizer!! This recipe we used on our Mother-Daughter wine weekend in Sonoma it was a huge hit ... thanks to Sandra Lee since this is her creation

Preparation

Cut the figs in half, take a knife to push the inside flesh to the outter sides of the fig to make a small hole / divet. Cut some of the Chevre an stuff it inside the middle of the fig filling the hole (dont be skimpy here) get as much goat cheese in there as possible. Then take on slice of prosciutto and tear in half so you have two strips. Wrap one strip from one corner on the fig to the other and do the same the other way with the second strip (covering the fig with the prosciutto). Lay these on a foil lined baking sheet. 10 figs will make 20 (halves) appetizers. Mix honey and pumpkin pie spice in a small bowl then drizzle over the wrapped figs. Put in a 400 degree oven for approx 8 min, keeping an eye on them. Then plate and serve. The combination of these flavors melt in your mouth when they are heated up. Mmm enjoy!

When I first did this the oven I was using burnt the honey so use tin foil to line your baking sheet and keep an eye on them in the oven, too long and you''ll ruin them. [I posted this recipe.]
