Basic Mixed Salad

Salad has become part of our everyday cuisine, and every time I open a magazine, I?m astounded at how imaginative the salad combinations have become. The basic mixed salad of tomatoes, cucumber, and lettuce is often still there but dressed up to the nines.

Ingredients


Preparation

Place the lettuce and or greens, carrot, pepper, tomato, cucumber and onion in a bowl and toss to mix.

Pour about 1 tablespoon of the basic vinaigrette or your favourite dressing over the salad and toss to mix,

But remember only to add a dressing just before serving that way your salad will remain nice and crisp.

This salad remains our favourite basic salad and the salad greens we use include Rocket (Arugula), Cos (Romaine), Torn, Watercress, Mesclun, Radicchio, Mustard Leaves, and Fris?e, in fact we now grow, most of our own salad leaves on the balcony, and very tasty they are too.

Salads are green, light with plenty of fibre, but they don''t usually have a lot of protein.

Adding 100 grams of fresh or canned tuna, salmon, beans, tofu, chickpeas, cooked chicken, or another lean meat will provide a delicious solution to that predicament.
