Marilyn's Breakfast Noodle Pudding

Ingredients


Preparation

1. In small saucepan heat milk with vanilla until tiny bubbles form around the edge.

2. Remove pan from heat and add raisins and margarine; let stand for at least 10 minutes.

3 Preheat oven to 350 degrees. In large bowl beat together milk raisin mixture, egg yolks, sugar, sweetener, lemon or orange peel, cinnamon, salt, and nutmeg. Gently stir in noodles.

4. In small mixing bowl beat egg whites until soft peaks form; fold whites, 1/3 at a time, into noodle mixture.

5. Spray 1 1/2 qt casserole with nonstick cooking spray. Transfer noodle mixture to casserole and bake until firm, about 30 minutes.

Can be eaten warmed or cold!
