Citrus Chicken Satay with Peanut Sauce

This chicken is marinated in peanut oil and lime juice and then put under a hot broiler. It goes very nicely with the peanut sauce and pineapple fried rice on the side.

Ingredients

  • 2 tablespoon Peanut oil
  • 1 tablespoon Sesame Oil
  • 1 Juice from 1/2 lime
  • 2 Chicken breast skinless, boneless
  • 1 -- Peanut sauce --
  • 1 tablespoon Peanut oil
  • 1 small Onion finely chopped
  • 1 small Green chile peppers seeded and chopped
  • 1 Garlic cloves finely chopped
  • 0.5 cup Crunchy peanut butter
  • 6 tablespoon Water
  • 1 Juice from 1/2 lime

Preparation

Cut the chicken into 1 inch cubes and set aside. Combine both the oils and the 1st lime juice in a non-metallic dish. Add the chicken to the bowl, cover with plastic wrap and let marinate in refrigerator for 1 hour.

Presoak 8-12 bamboo skewers in water to prevent scorching when baking.

To make the peanut sauce, heat the oil in a small pan and saute the onion, chile pepper and garlic, stirring occasionally for about 5 minutes, or until softened. Add the peanut butter, water and lime juice, stirring constantly until the peanut butter has a sauce consistency. Transfer to a bowl and set aside.

Drain the chicken cubes and thread onto the bamboo skewers. Broil for about 10 minutes or until cooked throughout. Serve hot with the warm peanut dip.

This was easy to make and delicious. Next time I make it, I will use less peanut oil in the sauce (maybe 1 Tbs instead of 2), as it was a little oily. The flavor was great, though. Don't cook the sauce too long or it will start to fall apart -- remove from heat as soon as it's nice and creamy.
