Baked Macaroni and Cheese

Try this simple macaroni and cheese recipe. Use 2-3 different cheeses for better flavor.

Ingredients


Preparation

Heat oven to 350 degrees.

Bring water to boil. Add olive oil and salt. Add macaroni and cook to el dente (about 8 minutes). Strain and remove to baking dish.

In heavy saucepan on low heat, melt butter. Add flour, stirring often to cook flour taste out of mixture (about 5 minutes).

Cut 2/3rds of cheese into small pieces and add to flour mixture. Use 2-3 different cheeses for better flavor (e.g. sharp cheddar, colby, smoky swiss). Add milk and stir often until cheese is melted.

Add cheese mixture to noodles and mix together well.

Shred remaining 1/3rd of cheese and sprinkle over top of macaroni and cheese mixture.

Bake at 350 degrees for about 30 minutes or until cheese on top is lightly browned.
