Baked Fish with Potatoes Ingredients

4 lb Filet of fish 4 Celery stalks, chopped
1 Green pepper, chopped 1/2 Bunch parsley, chopped
3 Garlic cloves, chopped x Pinch of sugar
3 Bay leaves 6 Potatoes, cut-up
1 cn Stewed tomatoes, pureed x Olive oil
2 lg Onions, chopped

Instructions for Baked Fish with Potatoes

Saute onions, pepper, celery, garlic, and parsley in olive oil. Add blended tomatoes and bay leaves. Cook approximately for 1 hour, add sugar. Oil a roasting pan, season the fish with salt and pepper. Place fish in pan with cut-up potatoes. Pour sauce over potatoes and fish. Bake for approximately 1 hour. Basting every 15 minutes.
