Bacon and Cheddar Pancakes Ingredients
1 c
Flour
2 c
Buttermilk
1 c
Cornmeal
1/2 c Plain
yogurt
1/3 c
Sugar
1/4 c Unsalted
butter
; melted
1 ts
Salt
2 c Mild
cheddar
cheese; grated
1 ts
Baking soda
1 lb Cooked
bacon
; crumbled
3 lg
Eggs
Instructions for Bacon and Cheddar Pancakes
1. In large bowl, whisk together flour, cornmeal, sugar, salt and baking soda. 2. In another bowl, whisk together eggs, milk, yogurt and butter. Whisk into flour mixture just until combined. 3. Heat griddle over med heat (350F). Preheat oven to 200F if you want to hold pancakes. 4. Pour 1/4 cup of batter, forming 4" rounds and sprinkle 1 tbsp of cheese and bacon onto each pancake.
