Instructions for The Wedge of Light
Preheat oven to 400 degrees. Cut each potato lengthwise into 4 slices. Then cut each slice into 2 wedges. Place potatoes in a large bowl. Add olive oil and Cajun spice. Toss well to coat potatoes evely with oil and seasoning. Transfer potatoes to a large baking sheet that has been sprayed with on-stick spray. Spread evenly ini a single layer. Bake for 20 minutes. Turn wedges over bake another 20 to 25 minutes, until golden brown on the outside and tender on the inside.
