Baked Mexican Rice Ingredients

1.0 Onion, finely chopped 8.0 sl Chorizo or garlic sausage
1.0 clove Garlic finely chopped 0.0 (chorizo is very spicy, use

236.6 ml Rice 0.0 With garlic sausage for
4.9 ml Salt 0.0 Less spicy flavor)
4.9 ml Freshly ground pepper 354.9 ml 14 1/2 oz. chicken or beef
14.8 ml Chilli powder 0.0 Broth
1.0 Jar button mushrooms(4 oz.) 0.0 Grated Parmesan Cheese

Instructions for Baked Mexican Rice

Directions: Saute the onion and garlic in the oil until soft. Add the rice and seasonings and brown th rice lightly. Add the mushrooms, sausage and enough boiling stock to come 1 inch above rice. Cover with tight lid and bake in a 350 oven until liquid is completely absorbed about 30 to 35 minutes.
