Preparation

In a large bowl measure dry ingredients. Stir to mix. Make a well in center. In a small bowl beat eggs until frothy. Mix in oil, milk and bananas. Pour into well. Stir just until moistened. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake at 400 degrees for 20-25 mins. Source: Companys Coming-Muffins and More by Jean Pare. I buy organic bananas and when they become overripe I put them in the freezer. When ready to use, I thaw them a little, peel and mash. I used oat milk instead of dairy milk and whole wheat pastry flour for half of the flour. These muffins are delicious and healthful. I will make them again and again. Thank you!

My son loves oatmeal muffins and hates fruit so what better way then to sneak some fruit into a favourite recipe. This was very good and will save to make again. Also good with a few chocolate chips.
