Sweet Potatoes with Apricots Ingredients

2 lb Sweet potato	1/4 c Margarine
1 lg Pitted apricots	1/4 c Liquid from apricots
1 ts Orange rind	1/4 c Walnuts
1 c Brown sugar

Instructions for Sweet Potatoes with Apricots

Arrange potatoes and apricots in layers with brown sugar. Melt the margarine in apricot liquid; add orange rind. Pour over the potatoes. Bake at 375 uncovered for 45 minutes.
