Basic Cornbread Ingredients

2 c Cornmeal 2 c Rice milk
1/2 c Whole wheat flour 4 tb Frozen apple juice
1/3 c Oat flour Concentrate, thawed
1/3 c Millet flour 3 ts Ener-G Egg Replacer, well
4 ts Baking powder Beaten with 4 tb. water

Instructions for Basic Cornbread

Preheat oven to 375 degrees. Mix the cornmeal, flours and baking powder together and set aside. Mix the remaining ingredients together and pour over the dry ingredients. Fold together briefly. Pour into a nonstick 8-inch square pan. Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. From Geminis MASSIVE MealMaster collection at www.synapse.com/~gemini
