Basic Vegetarian Tomato Sauce Ingredients

Instructions for Basic Vegetarian Tomato Sauce
You can substitute fresh tomatoes in this recipe. Remember 1 pound of fresh equals 1 cup of canned. FINELY CHOP TOGETHER the carrot, celery, onion, parsley and basil, or pulse them in a food processor. Warm the olive oil in a large skillet. Saute the chopped vegetables for 10 minutes, stirring often. Puree the tomatoes through a food mill into the pan. Add the salt and several grindings of pepper. Bring to a simmer and cook, partly covered, over very low heat, for 2 hours. Pass the finished sauce through the medium blade of the food mill. I didn't have fresh basil and used diced canned tomatoes with basil in them. When the mix was simmering I added other veggies I had in my frige -- chopped zuchini and mushrooms as well as some garlic powder. I did NOT pass anything through a food mill, which produced a sauce with richer texture. At the very end of the cooking I added dry basil to the mix. Served the sauce over pasta, garnished with fresh parsley and freshly grated Parmesan cheese. Very delicious, reminding me of a truly Italian sauce. And it did NOT give me heartburn, which often happens with recipes that use sugar to cut the acidity of the tomatoes.
