Basil Mashed Potatoes Ingredients

2 1/2 lb Baking potatoes,; peeled 1/2 c Chopped basil leaves
3/4 c Heavy cream 1 tb Grated ginger
1/2 Stick unsalted butter 1 tb Minced garlic
2 tb Lemon juice Salt

Instructions for Basil Mashed Potatoes

In a large saucepan of salted water bring potatoes to a boil. Simmer about 20 minutes or until tender. Drain. Pass potatoes through a ricer into a mixing bowl. Meanwhile, in a small saucepan combine cream and butter. Bring to a boil and keep hot until potatoes are cooked. With a mixer or electric beater whip potatoes on slow speed, slowly drizzling in cream mixture. Do not overmix. Fold in lemon juice, basil, ginger and garlic.
