MIX THE FLOUR, SALT, PEPPER, oil and yolks together. Gradually whisk in the beer. Refrigerate the batter 3 1/2 hours to rest before using. Slice onions, and dip them in the batter. Deep-fry in 375F oil until golden brown. This batter also works well on other vegetables besides onion rings--and its great on fish, too. A great recipe. Very simple and basic, however it does take a bit of time and is a little messy to make, but well worth it every once in a while since they're so good! The onion rings turned out light, crispy, delicious, and very addictive! The only things we did different was to cover the sliced onions with ice water and let soak for two hours while the batter rested. We then dried the onion rings thoroughly, dust them with additional flour, shaking off any excess, prior to coating them with the batter. I prefer using Vidalias or Walla Walla Sweets but any onion will do, as the ice water treatment makes strong onions milder and sweeter. The dusting of flour helps the batter to adhere. We served these with ice cold beer and a Sriracha Mayonnaise Dipping Sauce made by combining 2 cups mayonnaise, 1/2 cup Sriracha sauce, 2 Tbsp. condensed milk, and 1 tsp. sea salt.
