Strawberry Special Muffins Ingredients

WET MIX	1 lg Lemon; grated rind &
1/2 c Margarine	DRY MIX
1/2 c Sugar	2 1/2 c Self-raising flour
2 Eggs	TOPPING
1 c Strawberry yoghurt	Equal parts of cinnamon or
1 1/2 c Chopped fresh strawberries

Instructions for Strawberry Special Muffins

Preheat oven to 350?F, prepare pans. Blend the margarine & sugar & beat in the eggs & yoghurt. Fold in the chopped strawberries, lemon juice & rind & very carefully fold in the flour to avoid squashing the fruit. Spoon into pans, sprinkle with topping if desired & bake for 20-25 mins. Variations: Any fresh berry fruit may be substituted for the strawberries (raspberries, blackberries, boysenberries, loganberries, marionberries, cranberries, blackcurrants, elderberries or blueberries).
