Red Beans and Brown Rice Ingredients
1 lb Dried red kidney
beans
1 c Cooked
ham
; minced
2 qt Cold water
1 ts
Salt
1 md
Onion
; chopped
1/2 ts
Pepper
1 lg Green
pepper
; chopped
4 c Cooked
brown rice
Instructions for Red Beans and Brown Rice
Place beans in a large kettle, add water and soak overnight. Next day, add onion, green pepper, ham, salt and pepper to beans in their soaking water. Bring to boil, lower heat and cook 2-1/2 hours. Remove cover and cook another 30 minutes on lowest heat. Serve over beds of hot brown rice. NOTE: Brown rice is raw rice which has not been polished to the white stage usually seen.
