Red Beans and Rice Ingredients

2 c Chopped onions 1/4 ts Hot pepper sauce
2 Garlic cloves; minced 1/4 lb Kielbasa sausage
1 Bay leaf (fully cooked),
1/4 ts Cayenne pepper cut into 1/4inch slices
8 oz Tomato sauce 30 oz Canned pinto beans*; drained
1 ts Worcestershire sauce 3 c Hot cooked rice

Instructions for Red Beans and Rice

Combine onions, garlic, bay leaf, cayenne pepper, tomato sauce, Worcestershire, and hot pepper sauce in 3-quart microproof baking dish. Cover and cook on HIGH (maximum power) 6 minutes. Add sausage and beans; stir. Reduce setting to MEDIUM (50% power) and cook, covered, 10 minutes, stirring after 5 minutes. Let stand 5 minutes. Remove bay leaf. Serve over hot rice. Serve with hot pepper sauce, if desired. *Any type of bean may be substituted.
