Red Pepper Hummus

Ingredients

  • 2 large Garlic cloves chopped
  • 1 can garbanzo beans (15-ounce)
  • 1/3 cup Tahini (sesame seed paste)
  • 1/3 cup Fresh lemon juice
  • 1/2 cup Roasted red peppers drained and choppsed

Preparation

With processor running, drop garlic through feed tube and mince. Scrape down sides of work bowl. Add chick-peas, tahini and lemon juice; process until mixture is smooth. Add roasted peppers; process until peppers are finely chopped. Season with salt and pepper. Transfer hummus to small bowl. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before serving.) This is delicious! Next time I would use a little less lemon juice, substituting some of the liquid from the beans because it was a bit tart for my taste, but otherwise absolutely DELICIOUS!!

I used homemade roasted red peppers. I roasted the peppers first, then started on the hummus after the peppers had cooled. It was delicious, but after one day it lost a lot of its yummy taste, and the garlic really took over. We called it garlic dip when we brought it to a party, but regardless, it was a hit. :) Thanks for the post.

I always like trying new hummus recipes. I used homemade roasted peppers which were preserved in vinegar, and this lent a sweet and sour flavor to the hummus.
