Rice and Black Beans Ingredients

1 tb Oil 1 cn (14 1/2 oz) stewed tomatoes
1 md Onion, chopped 2/3 c Water
2 Cloves garlic, minced 1/2 ts Dried oregano leaves
1 cn (15 oz) black beans, rinsed 1 1/2 c Instant brown rice

Instructions for Rice and Black Beans

Heat oil in large skillet. Add onion and garlic. Cook and stir until tender but not browned. Stir in beans, tomatoes, water and oregano. Bring to a boil. Stir in rice. Return to boil. Reduce heat to low, cover and simmer 5 minutes. Remove from heat. Let stand 5 minutes.
