Rice Stuffed Tomatoes Ingredients
2 c Cooked
rice
2 tb
Parsley
-- minced
1 tb
Olive oil
1/4 c Pulp from
tomato
es
1/4 c
Onion
-- chopped
4
Tomato
es
80 ml
Garlic
; roasted -- minced
2 tb
Parmesan
1/4 c Green
pepper
s -- chopped
Instructions for Rice Stuffed Tomatoes
Slice tops off of tomatoes. Remove pulp and saute in oil with onions, garlic and peppers. Toss with rice, salt and pepper. Stuff tomatoes.
