Boiled Navy Beans Ingredients
1 lb Dried Navy
beans
; (2 cups)
1 ds
Pepper
2 ts
Sugar
7 c Cold water
1 ts
Salt
1/4 lb Salt
pork
Instructions for Boiled Navy Beans
Pick over and wash beans thoroughly in cold water. Place beans in a 3 or 4-quart saucepan, add remaining ingredients, cover and SIMMER for 2 1/2 to 3 hours until beans are tender but not mushy. Shake the pan occasionally to prevent sticking. Edible cow peas and soy beans may be cooked in the same manner. Makes about 6 cups.
