Preparation

1. Combine tomatoes, basil, minced garlic, salt & pepper. Let stand 15 minutes or cover and refridgerate for up to 4 hrs. 2. Slice bread in 1" slices. Place on baking sheet and broil until lightly browned. Rub cut side of garlic cloves over 1 side, and then brush with olive oil. Spoon tomato mixture over, and sprinkle with parmesan if desired. 3. The term bruschetta refers specifically to toasted bread, rubbed with garlic and drizzled with good olive oil...it's basically Italian Toasted Garlic Bread. This version is actually the classic Italian starter Bruschetta al Pomodoro or Toasted Bread with Tomatoes. Bruschetta is my absolute favorite appetizer during the summer or whenever I can get great tasting, fresh, ripe tomatoes. There is just nothing better than the magic of fresh tomatoes, garlic, basil and olive oil on top of toasted bread. We made this for a great, light lunch served with cottage cheese on the side.
